What It Is

Edomae sushi (江戸前寿司) is the original Tokyo style — nigiri made with aged, cured, and seasoned fish prepared by the chef, not raw fish placed directly on rice. Techniques like light vinegar curing, salt-resting, and kombu aging bring out depth that fresh-only sushi doesn’t have. The style originated in Edo-period Tokyo when refrigeration didn’t exist; the preparation was the preservation.
